PREPARATIONS
- Choose the correct size of tapioca skin and wash until clean.
- Mix White pepper, flour, salt and chili powder together.
- Dip the tapioca peel in the egg.
- Dip the tapioca with the mixture.
- Heat the oil with medium strength of fire.
- Fry the tapioca skin until it is golden brown.

According to research made by Chemical Engineering Department, Faculty of Engineering, University Diponegoro, Semarangan, Indonesia, 15 to 20% of the cassava root is it's skin. Researches also found that the tapioca's skin contains

Protein - 1.93%
Carbohydrate - 81.09%
- This shows that the tapioca's skin contains high amount of carbohydrate.
Other than that, the tapioca does not absorb as many oil as potatoes if it is fried and in the same time decrease the amount of fat and oil taken.
Usually, the manager of tapioca based crisps will use the tapioca and neglect the skin. The skin will neither be fed to their animals or thrown away. The skin that had been thrown away can lead to pollution.
